They say dynamite comes in small packages. That was my thought exactly when I met Chef Frans Ramolotsa. Coming from a place I have never even heard of. Turfloop. Also called Mankweng, this is a university township about 20km outside Polokwane. I had to open google maps to find this little town.
Frans is one of those chefs that you can sit and talk to for hours. Anything about food. He shared memories of his early days as a chef. As a teenager, where he would cook for family and friends after school and sports activities. The days where he started falling in love with food.
Striving to further his tertiary education, Frans obtained his National Certificate in Professional Cookery. And on top of that, he also completed his certificate in Waitron and Bartending. An all-round chef. And this is exactly what restauranteurs are looking for. Chefs that also has the knowledge and understanding of front-of-house operations.
Frans comes forth as a quiet and calm individual, but when he walks through those kitchen doors, there is no compromising. Working as Chef de Partie at Gauteng’s most prominent and busiest casino, Emperor’s palace, he flourished. Being part of the team at the 5* Aurelia’s restaurant, a world-class destination for exquisite dining and culinary experiences. A restaurant well-deserved of its accolades. Working side by side with Complex Executive Chef, Milton Romi-Babany.
Frans is currently Sous Chef at ABSA Head Office in Sandton. He made me realize again the top caliber chefs we have in South Africa. Its beautiful when a career and passion come together, it creates something spectacular. These are one of those moments where one would say: ‘Watch this space!’
Highlights in Frans’ career was the opportunity to cook for South African President Cyril Ramophosa. Also for legendary retired soccer celebrity, Max Maponyani. He also had the privilege to cook for the South African DJ, record producer, singer and songwriter, DJ Black Coffee.
